Mary G. Enig, Ph.D. is an expert of international renown in the field of lipid biochemistry. She has headed a number of studies on the content and effects of trans fatty acids in America and Israel, and has successfully challenged government assertions that dietary animal fat causes cancer and heart disease.
Recent scientific and media attention on the possible adverse health effects of trans fatty acids has brought increased attention to her work. She is a licensed nutritionist, certified by the Certification Board for Nutrition Specialists, a qualified expert witness, nutrition consultant to individuals, industry and state and federal governments, contributing editor to a number of scientific publications, Fellow of the American College of Nutrition and President of the Maryland Nutritionists Association.
She is the author of over 60 technical papers and presentations, as well as a popular lecturer.

I keep looking back to the diet during the war and always assumed (thanks to my Mum) that the nation was healthier due to rationing BUT now I understand that it's about controlling portions - Mary (bless her!) simply says that yes, we're not doing as much physical work as we did 100 years ago but the diet was correct - all we have to do to make it fit today's lifestyle is to eat less of it - BECAUSE WE DON'T NEED THE QUANTITY ANYMORE!
It's SO simple - and SUCH a relief!
As for trans-fats - I feel nauseous!

Apart from that I'd question the amount of dairy we eat anyway - not only because I does wierd things to me - but we are the only animals that eat the stuff after we are weaned and we take it from another species who's milk proteins are very different to our own. That said I'd rather eat good butter than a spread anyday of the week.

I must admit that I tend to eat low/no fat and cant remember the last time I ate butter. Dont think I could drink whole milk now but could possibly make my porridge with it?
The messages out there are all so confusing. I must admit to making notes while watching the video. I am going to check ingredients now - am really concerned about what Mary said about transfatty acids. i always look at the 'saturated' fat content, but the message came across loud and clear that we must never eat transfatty acids - i just hope the labels are clear!
Think I should plan a whole day to do my food shop and remember to take my reading glasses as the small print of ingredients is really small. I am going to look into local farm shops though which should take some of the headache out of the shopping.
